Y’all, my husband loves quinoa. He loves it alone, as a side dish, as a salad, literally all the ways. I decided to make a lighter quinoa salad tonight for supper! Tyler was a BIG fan! I will absolutely be making this salad again this weekend for him to take to work for lunch! What I love about this recipe is you can make it with what you have in your pantry. I had pears, blue cheese, walnuts, and spinach! You can make this recipe your own with apples, feta, pecans, goat cheese, dried cranberries, or arugula! I hope you guys enjoy this recipe as much as we did. It’s so yummy!
- 1 cup cooked White Quinoa
- 2 Pears chopped
- Roughly 1/4 cup Red Onion chopped
- 4oz crumbled Blue Cheese
- 2 1/2 cups chopped Spinach
- Roughly 3/4 cup chopped Walnuts
1/4 cup olive oil
3 tbsp apple cider vinegar
1-2 tsp maple syrup
2 tsp dijon mustard
1/4 tsp ground cinnamon
salt to taste
