Hey y’all! It’s day 2 of meatless December…and I’m not going to lie…it’s pretty easy. In college, I went months without eating meat. I think I’m a vegetarian at heart. ♥️ Tyler is traveling for work tonight, so this little meal was made for one!
Tonight, I made a yummy pesto pasta over greens for dinner.
How to make this yummy pesto pasta for one…
- Boil: Trader Joe’s brown rice and quinoa noodles
- Heat/Sweat: olive oil, garlic (minced), red onion (minced), black olives (sliced), roasted red peppers (sliced)
- Once the noodled are cooked, rinse, and add to the yummy mixture with about 2-3 tbsp of jar pesto!
- Once mixed, poor over a bed of mixed greens and top with feta!
