Simple Pesto Pasta

Hey y’all! It’s day 2 of meatless December…and I’m not going to lie…it’s pretty easy. In college, I went months without eating meat. I think I’m a vegetarian at heart. ♥️ Tyler is traveling for work tonight, so this little meal was made for one!

Tonight, I made a yummy pesto pasta over greens for dinner.

How to make this yummy pesto pasta for one…

  • Boil: Trader Joe’s brown rice and quinoa noodles
  • Heat/Sweat: olive oil, garlic (minced), red onion (minced), black olives (sliced), roasted red peppers (sliced)
  • Once the noodled are cooked, rinse, and add to the yummy mixture with about 2-3 tbsp of jar pesto!
  • Once mixed, poor over a bed of mixed greens and top with feta!
  • Enjoy!!!

Matthew 11:28–30: 28 “Come to me, all of you who are weary and burdened, and I will give you rest. 29 Take up my yoke and learn from me, because I am lowly and  humble in heart, and you will find rest for your souls. 30 For my yoke is easy and my burden is light.”
