Who want’s a cookie?

Entering 2020, I knew there were a few bad habits I needed to break. One being shopping out of boredom. This year I’ve decided to spend more time in the kitchen and hopefully not visit Green Hills mall three times a week. I obviously find so much joy cooking, but baking is a whole other story. I am not a baker. When my sister was around 8 years old, she started baking with our mom. Over the years she has baked most gorgeous, tasty cakes. Unfortunately, everything I’ve ever baked winds up in the trash. And I don’t just mean cakes and cookies, I mean anything involving flour. The last batch of sausage balls I made Tyler were so bad I spit them out. Not exaggerating. So, in 2020 I will be spending all my free time in the kitchen…baking.

Today I baked oatmeal chocolate chip cookies. I added walnuts and coconut flakes to the batter. I also wanted them to be cute and bitesize. Two things I know for certain, they are cute and they are bitesize. Whether they actually taste good, that’s for Tyler to decide.

Oatmeal Chocolate Chip Cookies

  • 1 egg
  • 1/2 cup unsalted butter
  • 1 cup coconut sugar
  • pinch of stevia
  • 1 tbsp vanilla extract
  • 1 cup oats
  • 1 cup unbleached AP flour
  • 1/2 cup shredded coconut flakes
  • 1/2 cup Lilly’s semi-sweet chocolate chips
  • 1/3 cup chopped walnuts
  • 1/2 tsp baking powder
  • pinch pink Himalayan salt
  • dash of cinnamon

Start by mixing egg, butter, sugars, and vanilla. Next, in a separate bowl mix oats, flour, coconut flakes, walnuts, baking powder, salt, and cinnamon. After the dry ingredients are mixed well, add in the wet ingredients plus chocolate chips. Bake on 350 for 10 minutes. Let cool on a baking rack and enjoy!
